SAP Business One comes with a feature called the Change Log.  The change log is a full audit trail of any change made to any document (such as a sales quote, sales order, purchase order, etc), master data record or setup element.

To view these changes, go to Tools > Change Log from the SAP Business One menu bar.  A change log window will open that lists the changes including user name so you can see who made the change, date and time so you know when they made a change, and all versions of that document or record.  You can see how the record existed in a specific version.  If there are multiple changes, you can hold down the CTRL key and click on two or more lines, then click on the Show Differences button to see a full list of what changed between iterations of the document.

With the change log in SAP Business One, you can see who made a change, what they changed, and when they did the change.
